Roland Trettl was born on July 3, 1971, in Bolzano, Italy. When his parents gave him the choice of becoming a carpenter or a chef, he opted for a chef apprenticeship – not least on the advice of his grandfather, who thought that a carpenter could easily lose a finger.
In 1987, he began his training at the "Parkhotel Holzner" in Oberbozen, gaining initial experience for three years. After a year at the "Restaurant Amadé" in Bolzano, he moved to Munich, where he worked for two years at the "Restaurant Aubergine" under the direction of Eckart Witzigmann – an encounter that would significantly shape his future path.
