Roland Trettl is a personality who stands out. Charismatic, authentic, and a perfectionist when it comes to quality and taste . Many know him as a TV star from various cooking and entertainment programs , yet there are few others who possess such a profound knowledge of the world's culinary cultures . Born in South Tyrol, he matured under the guidance of his mentor, the chef of the century, Eckart Witzigmann , into one of the world's most renowned chefs and culinary visionaries.

The beginnings
From apprentice to visionary
Roland Trettl was born on July 3, 1971, in Bolzano, Italy . When his parents gave him the choice of becoming a carpenter or a chef, he decided to become a chef – not least on the advice of his grandfather, who said that as a carpenter, you could easily lose a finger.
In 1987, he began his apprenticeship at the "Parkhotel Holzner" in Oberbozen and gained his first experience over three years. After a year at the "Restaurant Amadé" in Bolzano , he moved to Munich , where he worked for two years at the "Restaurant Aubergine" under the direction of Eckart Witzigmann —an encounter that would decisively shape his future career.

Roland Trettl's passion for culinary arts and respect for high-quality ingredients drove him. After two years at Munich's "Restaurant Tantris," he returned to "Restaurant Amadé" for a short time before Eckart Witzigmann brought him back into the team.
As head chef of “Ca's Puers” in Mallorca, he demonstrated his skills for four years before moving on to international engagements in event catering and a one-year stay as an F&B trainer at “Marine Terrace” in Tokyo .
But in 2003 , everything changed: Red Bull founder Dietrich Mateschitz invited Trettl and Witzigmann to develop a completely new restaurant concept. The result: the legendary "Restaurant Ikarus" in Hangar-7 in Salzburg , which Roland Trettl led as Executive Chef for ten years . A different international top chef cooked there every month – a concept that revolutionized fine dining.
