From the first sprout to the last ground flake, every portion of our paprika contains the full power of traditional craftsmanship:

The pepper seeds are sown in spring, fed by the nutrient-rich waters of the Danube. Harvesting is done entirely by hand, and only the first harvest is processed, as only this contains the full power of the flavors. A six-week ripening period in the sun gives the peppers their intensely vibrant color and full-bodied flavor. After gentle drying, each pepper is carefully sorted, destemmed, and pith removed. Freshly ground, they are immediately packaged in airtight containers for a spice that tastes its origins in every pinch.

The difference lies primarily in the level of heat and the composition of the ground paprika pods.

Sweet paprika is the classic variety for goulash, sauces, stews, or potato dishes. It adds color and pleasant seasoning without being overly spicy.

🌶️ Hot Paprika

  • noticeable, but not extreme heat

Hot paprika contains more heat-bearing components of the paprika (e.g., ribs and seed parts). It is suitable if you want to add more intensity and a slight kick to dishes.

The ASTA value is an internationally recognized measure of the color intensity of paprika powder. It was defined by the American Spice Trade Association (ASTA) and indicates how strong the natural red coloring of the paprika is.

The higher the ASTA value, the:

  • more intense and vibrant the red color
  • higher the coloring power in the dish
  • generally better the raw material quality


Paprika powder is not only used for its spice but also for its coloring effect. A high ASTA value ensures that goulash, sauces, or grilled dishes have a rich, appetizing red color.

Hand-selected paprika means that the peppers are carefully chosen by hand before further processing. Only fully ripe, healthy, and high-quality fruits are used. Damaged, unripe, or discolored peppers are sorted out.

Yes – but with caution.

Paprika powder is heat-sensitive and should not be fried directly in hot fat at high temperatures. If heated too much, the colorants and flavorings it contains can burn.

Here's how to do it correctly:

  • First, sauté onions or other ingredients
  • Reduce the heat or briefly remove the pan from the stove
  • Stir in the paprika powder
  • Immediately deglaze with liquid (e.g., broth or water)

This way, the color remains intense and the flavor well-rounded.

Paprika powder usually turns bitter when it is:

  1. Heated too strongly

    Direct heat in hot oil burns the fine components.
  2. Dry-fried for too long

    Without liquid, it can quickly overheat.
  3. No longer fresh

    Old spices lose quality and develop an unpleasant note.
  4. Of low raw material quality

    Weak or old stock can taste slightly bitter from the start.

Tip: Always add paprika powder only towards the end of roasting and work quickly with liquid – this way it retains its intense color and balanced flavor. 🌶️
