Vinegar varieties differ primarily in the basic ingredients used and the production method. Depending on the variety, the acidity, fruitiness, and culinary application vary. Generally, vinegars can be divided into several categories.
Classic vinegar varieties include, for example, apple cider vinegar, white wine vinegar, or red wine vinegar. They are particularly suitable for salads, marinades, and savory dishes.
Fruit vinegars are made from fruits or fruit juice, such as raspberry, mango, or pomegranate vinegar. They add freshness to dressings and pair well with cheese, desserts, and creative recipes.
Specialty vinegars are created through special ingredients or refinements, for example, with herbs or spices. They provide variety and new flavor combinations in the kitchen.
Vinegar is produced through a natural fermentation process. The basis is always a sugar- or alcohol-containing liquid, such as fruit juice or wine. In a first step, the sugar contained is converted into alcohol by yeasts.
In the second step, acetic acid bacteria convert this alcohol into acetic acid with the help of oxygen. This process gives vinegar its typical acidity. Depending on the starting product, maturation time, and manufacturing process, different types of vinegar are produced – from mild to robust.
For fruit vinegars, high-quality fruits or fruit juices are used, which additionally give the vinegar freshness and depth. Gentle processing and sufficient maturation time are crucial for quality and balance.
STAY SPICED ! fruit vinegars are particularly suitable for salads. Varieties such as apple cider vinegar, raspberry, mango or pomegranate vinegar bring freshness and a balanced acidity to the dressing. Depending on the salad, you can choose between classic-mild or fruity-intensive – ideal for leafy salads, bowls or salads with cheese and nuts.
