Challenges

The classic BBQ, as we know it, arrived in our country from the States some time ago. Whether it's brisket, pulled pork, or ribs in various forms, gently smoked for many hours at indirect, low heat in the smoker and refined with BBQ sauce – we are prepared for anything. The challenge is to create a perfect symbiosis between smoke, inherent flavor, and optimal seasoning, without neglecting any of these flavors.

What distinguishes true BBQ from grilling?

BBQ involves working with temperatures of 90 to 120 degrees. The goal is to prepare the meat low and slow. The original purpose of this technique was to gently braise parts of the animal such as brisket, ribs, shoulder, thighs, and neck at low temperatures and exclusively with indirect heat for a long time until tender. Everything else falls under classic grilling.

BBQ Recipes for Grilling & Smoking

All the essentials at a glance

The difference between Grilling and BBQ (Barbecue) primarily lies in temperature, cooking time, and technique. Although both methods take place on a grill, they employ different approaches.

Grilling – quick & hot

Classic grilling involves working with direct, high heat:

  • Temperatures usually above 200 °C
  • Short cooking times of a few minutes
  • Food is placed directly over the heat source
  • Ideal for sausages, steaks, burgers, or grilled vegetables

BBQ – slow & gentle

BBQ (Barbecue) relies on low temperatures and patience:

  • Temperatures between 90–130 °C
  • Long cooking times over several hours
  • Cooking with indirect heat
  • Often combined with smoke (smoking)

A good BBQ requires time, the right technique, high-quality ingredients, and appropriate seasoning. In contrast to classic grilling, BBQ focuses on slow cooking at low temperatures.

The most important components of a good BBQ

1. Patience & Temperature Control

A good BBQ takes time. Cooking is done at 90–130 °C, usually with indirect heat. Only then do meat and plant-based alternatives remain juicy and tender.

2. The Right Technique

Whether it's a smoker, kettle grill, or gas grill with an indirect zone – crucial is the even heat distribution and controlled cooking.

3. High-Quality Ingredients

Good BBQ starts with the selection:

  • Meat with sufficient fat content
  • Fresh vegetables, tofu, or plant-based alternatives
  • Clean cuts like ribs, pulled pork, or brisket

4. Spices, Rubs & Marinades

Seasoning is central:

  • BBQ rubs for a robust crust
  • Marinades for juiciness
  • Spices that can withstand heat and long cooking times

5. Smoke & Wood (optional)

Wood chips or chunks add depth to the BBQ. Depending on the type of wood, mild or strong smoky notes are created.

6. Resting Time After Cooking

After the BBQ, the grilled food should rest briefly – this allows the meat juices to distribute evenly.

BBQ is seasoned not just before grilling, but early and intentionally. Key factors are time, technique, and the right form of seasoning – usually in the form of rubs or marinades.

1. How to use BBQ rubs correctly

Rubs are dry spice blends and classics in BBQ.

Here's how to proceed:

  • Pat meat or plant-based alternative dry
  • Massage rub evenly
  • Allow to sit for at least 30 minutes, preferably several hours
  • If necessary, let it marinate overnight in the refrigerator

👉 Rubs provide flavor, color, and a robust crust during slow cooking.

2. Using marinades strategically

Marinades are particularly suitable for:

  • Poultry
  • Fish
  • Vegetables
  • Tofu & meat substitutes

Tips:

  • Marinades usually contain oil + spices + some acid
  • Allow to marinate for 30 minutes to several hours
  • Scrape off excess marinade before BBQ

3. Dosage – how much seasoning is right?

For BBQ, it's best to season evenly and sufficiently.

Rule of thumb:

  • approx. 20–30 g rub per kg of meat
  • Season vegetables a little lighter, re-season after cooking if necessary

4. Don't forget to season afterward

For BBQ, you can also finely season after cooking:

  • Pepper
  • Chili
  • Herbs
  • Finishing spices

This keeps the seasoning fresh and balanced.

5. Rub or marinade – which is better?

  • Rubs: ideal for long cooking times & a robust crust
  • Marinades: perfect for juiciness & shorter cooking times

👉 Both can also be combined – first marinate, then lightly rub.
