Here's a suggested recipe for gingerbread: 500g flour, 2 eggs, 125g ground almonds, 250g sugar, 250g butter, 5g speculatius spice, 1 grated orange zest, a pinch of salt, and 5g ammonium carbonate dissolved in 1 tablespoon of milk. Quickly knead all ingredients together on a baking board and let rest in a cool place for 12 hours. Knead the dough thoroughly again, press it into a wooden baking pan or roll it out thinly on a floured board, and cut out the shapes. Place the shapes on well-greased baking sheets, brush with milk or egg, and sprinkle with grated almonds, if desired. Bake at 200°C for approximately 12-15 minutes. Enjoy!
