SHORT DESCRIPTION

Discover the "Ceviche & Poké" spice mix that we developed together with Ben Perry. Ceviche is a refreshing and light dish from Latin America that is traditionally made with fresh fish or seafood. The main ingredient is marinated in lemon or lime juice, which denatures the protein in the fish and gives it a "cooked" consistency.

USE

Rinse the fish or seafood thoroughly under cold water, pat dry and cut into small, even cubes (approx. 1 cm). With seafood, make sure that they are evenly sized. Put everything in a bowl and pour the freshly squeezed lemon or lime juice over the fish so that it is completely covered. Sprinkle the finished ceviche spice mix over the fish and mix well. Cover the bowl and leave the fish to marinate in the refrigerator for 15 to 30 minutes, depending on the desired consistency. It is best served cold, e.g. with tortilla chips, on a bed of lettuce or with sweet potatoes and corn.

GOOD TO KNOW

Since the fish or seafood is marinated raw, it is crucial that it is absolutely fresh and of the highest quality. Ceviche comes in several regional variations. Peru is particularly well-known for its version with tiger's milk (leche de tigre), a spicy marinade. In Mexico, ceviche is often served with avocado and tomatoes.

TASTE

Our spice blend creates a balanced profile of salty, sweet, spicy and sour notes. The acidity of the lemons and the salt dominate, 'cooking' the fish and bringing out its natural sweetness. The tomatoes and demerara sugar provide a pleasant sweetness, while the shallots, garlic and onion add depth and heat to the dish. Capers and piment d'Espelette bring a piquant and fruity heat, and the coriander adds a refreshing note that rounds out the overall profile.
