Make a liquid marinade with olive oil, tart red wine, sliced onions and peppers and S! Greek Gyros seasoning. Soak the meat cut into pieces in it for a few hours.
Then fry the meat with a little oil from the marinade, turning it regularly. Reduce the temperature, season to taste and let it simmer. Your fried gyros meat goes well with Greek flatbread, rice or fried potatoes - or all of the above.
