STAY SPICED! Beef Brisket Barbecue Rub – the dry rub for tenderly cooked beef brisket. For a classic beef brisket, first remove the layer of fat on top of the brisket until you only see streaky meat. Important: The fat on the bottom stays on because it protects the brisket from the heat while cooking in the BBQ smoker and is only removed when cutting before serving. Then generously spread the STAY SPICED! Beef Brisket Barbecue Rub over the brisket and let it soak in for about three hours. Then grill the beef brisket indirectly at 110-120 degrees Celsius – the smoking process takes around 4-5 hours, by which time the brisket should have reached an internal temperature of around 65 degrees Celsius. Then wrap the beef brisket in aluminum foil or pink butcher paper, and the brisket needs another 2-3 hours until it reaches an internal temperature of 90 degrees Celsius. Now it should be tender and juicy.
