Cassia cinnamon is the classic cinnamon for desserts and goes well with rice pudding, sweet sauces and soups, compotes, puddings, sweet porridge, cakes, Christmas biscuits, baked apples, tarts, sheet fruit cakes, fruit salads, sweets and chocolates, mulled wine, punch, cocoa, iced coffee, black coffee and tea, gherkins, plums and pears. In oriental cuisine, many savoury dishes are also flavoured with it and in Central and Eastern Europe, Italy, Spain and Canada, Cassia cinnamon is also used to flavour soups, tomato sauce, vegetables, stews and couscous.
