Recipe: Spicy farmer's bread

Here he tells us the recipe of his spicy farmer's bread from the original pot Dutch Oven (but also works perfectly in any other vessel and in the oven). Let's go!

preparation

First, mix all the ingredients including rustic bread spice from STAY SPICED! in a mixing bowl and then add the warm water. Mix everything well, preferably in a food processor and then let the dough rise for about an hour. So the yeast can do its job and then gives you a loose, airy bread.

After letting it rise, you can add the dough to the original pot. If the dough has become a little too sticky for you, use some flour for your hands. This makes it easier to edit.

You form the dough with your hands and a little flour into a nice smooth ball and then place it in the slightly greased original pot. Lid on it and again for good for about 40 minutes in a warm place and let rest.

After this time, the dough should have increased significantly and can now be smeared with a little water and scratched a little with a sharp knife. This later ensures a nice crispy crust with fine fractures.

Now you can bake the bread. Either in an oven with about 200 ° C (best convection) or on the embers with 14 coals on the lid and 7 coals under the pot. After about 50 to 60 minutes of baking time – if it smells of fresh bread and the delicious spices everywhere, then the time has come and the bread is ready and allowed to cool down from the pot on a grate. Important: Please do not let the bread cool in the original pot!
