Recipe: Prawn Fajitas with Chipotle Sauce

Anyone who hears "Fajitas" somehow automatically always thinks of chicken – but the delicacies from the TexMex kitchen also taste wonderful with shrimps! The SPICEvips from BBQ Hiesenvillage prove this to us with their shrimp fajitas, which they also pimp with a DIY chipotle sauce. We think: Brilliantly good!

preparation

The preparation goes on the griller on a plancha or who does not have a griller simply in the oven. Preheat oven to 200 °C. Grease the baking tray or line it with a baking paper. Remove the seeds from the peppers and cut them into thin strips – peel the onion and cut it into fine rings – mix everything with shrimp, olive oil, spices – season with salt and pepper. Spread the paprika and shrimp mixture on a baking tray and bake in a hot oven for 8 minutes. Place the oven on the grill and bake for another 2 minutes. If you have a griller, preheat the plancha and spread a little oil and fry it briefly. Finely chop the parsley. Quarter lime. Remove the paprika and shrimp mixture from the oven or from the grill, sprinkle with parsley and cheese and garnish chipotle sauce and limes. Serve with tortillas.

Chipotle Sauce Recipe:

400 g mayonnaise
30 g Dijon mustard
40 g ketchup
2-3 pcs.  Chipotles from the Adobo can
1 tsp adobo sauce
fresh lime juice to taste
1 gestr. tsp Pimenton de la Vera Doux Paprika smoked by STAY SPICED !
1 tsp honey
2 cloves of garlic
Pinch of sea salt from STAY SPICED !
1/2 tsp Black Gold by STAY SPICED !
Shot of olive oil

Puree all ingredients with the blender until a creamy sauce is formed. Last but not least: transfer the sauce and, at best, let it steep in the fridge overnight, for at least a few hours. There it unfolds its full aroma

Recipe: Tarte flambée dough with great topping ideas

The tarte flambée or »Tarte Flambée« is a traditional dish from the Ellsässische cuisine. It is rumored to have arisen from a heat sample in the bread oven – thinly rolled out for temperature control. Probably a bread baker was hungry and put sour cream, bacon and onion on it. But anyway, the most important thing about tarte flambée is the dough!

Roland Trettl ́s world's best curry falafel

"I would never have been interested in falafel if my wife didn't get it again and again. Falafel is the vegetarian counterpart to currywurst – but certainly healthier than the billions of curry sausages that are eaten every year." Quote by Roland Trettl from his book "Nachschlag"
