Give egg yolk, lemon juice, the STAY SPICED ! Chakalaka spice blend, olive oil and buffalo mozzarella in a bowl. Pick up your hand blender and puree all the ingredients for a few minutes until the mixture combines and has a creamy consistency.

Now form small balls from the watermelon for the side dish and marinate them with olive oil, a pinch of salt and a splash of lemon juice. When you have prepared everything else, it's time to fry the scallop. Heat a pan and then add some olive oil.
