Beat the egg white together with the sugar and a pinch of salt until stiff. Add egg yolk, cream, Kaiserschmarrn spice and fold in the flour carefully.
Let the butter melt in a large pan over medium heat, add the dough and sprinkle with blueberries.
First bake on both sides of the stove and then sprinkle with sugar.
Then bake in a preheated oven at 200° brown so that the sugar caramelizes.
When the dough is ready, tear it with two forks, sprinkle with icing sugar and serve.
