Beef tataki with S! Ting Ting

Mix the soy sauce, honey, 1 tbsp ting ting spice, lime and ginger. Marinate the meat in it for about 30 minutes. During the marinating period, turn the meat several times.

Mix the crème frîache and the wasabi. Season with the grill salt.

Halve the Pak Choi, marinate the cut surface with a little olive oil.

Now grill the Pak Choi over high direct heat on the cut surfaces until it is soft. Then turn over, drizzle with the rind and stew for 10 minutes at 160°.
