Chocolate mousse with tonka bean

The tonka bean is considered a lucky charm and also enchants numerous sweet dishes with its extraordinary aroma. This chocolate mousse enchants the senses and maybe after the enjoyment one or the other wish will come true.

preparation

Break chocolate and melt with butter in a water bath. Stir regularly and stir to a smooth mass.

Beat the cream in a bowl until stiff and set aside.

In a separate bowl, mix eggs, honey and amaretto. Rub in the abrasion of about 1/2 tonka bean and beat until frothy.

Stir the egg mass into the chocolate butter mass and gradually fold in whipped cream by hand until a loose mass is formed.

Fill the chocolate mousse into dessert glasses and refrigerate for at least 1 hour in the freezer and let it become firm.

Drizzle chocolate glasses with Amarena cherries and syrup, garnish to taste with spray cream and add some Tonka beans abrasion over it.
