The gingerbread spice is a spice mixture that is traditionally used in the preparation of the eponymous pastry. Nowadays, it is not only used in the production of the actual gingerbread, but also for other products, such as yogurt, chocolate, tea or coffee blends, which are to be given a seasonal, Christmassy-winter aroma.

Melt 300 g of honey, 250 g of sugar and 125 g of butter; mix with 5 tbsp water, 125 g grated almonds, 150 g currants and refrigerate. Mix 2 tbsp gingerbread spice, 3 eggs, 50 g cocoa, 500 g flour and the staghorn salt and potash dissolved in water with the above mass until the dough is firm. Sprinkle the freshly baked gingerbread with chocolate crumble.
Above all, you can taste the coriander, cinnamon and cloves in this mixture. But it also contains anise, nutmeg, fennel and cardamom. What more could you want in a gingerbread spice? Have fun with the preparation!
