Tarragon cut - French

Tarragon is mostly used in Italian or French cuisine. However, its use as a spice makes sense not only because of its taste, but also because it strengthens the digestive organs and thus helps in the digestion of heavy foods.

use

Tarragon goes perfectly with sour pickled herring and a tomato salad also gets a special touch with a little tarragon. For pickles, tarragon is the spice par excellence. Tarragon is also often used for soups, sauces and fish. Very popular from Farnkreich, for example: the sauce Vinaigrette.

Good to know

Tarragon is used fresh or in vinegar conserved.

the taste

Since the tarragon has a very strong aroma, you should only use it sparingly, otherwise it would be too dominant and could drown out everything else. The scent is sweet and aromatic, slightly reminiscent of fennel and anise.  Tarragon tastes strongly aromatic, peppery and slightly bitter.

manufacturing

In southern Europe, tarragon is found as a wild plant. However, he is said to have arrived there a long time ago from the Far East. Commercially available fresh or dried tarragon comes from agricultural cultivation, on the German market mainly from the Balkan countries and the Netherlands.
