The pyramid salt from the Arabian Sea is considered one of the noblest salts. Due to the particularly fine salt structure, the pyramid salt from the Arabian Sea is always added to the respective dish only at the end. The salt is not ground, but can be easily crumbled over the food between the fingers. Hence the name finger salt.
Most of the salt crystals remain intact until they melt in the mouth. There, the pyramid salt unfolds its quite special taste from mild sweet initial to the slightly bitter and fruity salty aftertaste.
The sea water is slowly heated in the basins above which UV lamps are located. Foam is formed on the surface of the water and the salt crystallizes pyramid-shaped. After that, it is skimmed off and dried.
