Baking bread yourself is fun! And even more fun are two loaves of bread! With this recipe for a real farmer's bread, nothing goes wrong. Have fun while enjoying!
For the first part of the dough, mix the pre-dough the pack of yeast with a little warm water, mix sugar, 100g flour type 550 and 120ml water to a thick porridge in a medium-sized bowl. Then cover and warm so that the dough can walk for about 45 minutes.
After the pre-dough walking time for the main dough, mix the remaining flour in a large bowl with 350ml of water and add honey, salt and bread spice and knead a smooth dough together with pre-dough. For easy kneading, dust the hands with flour.
Dust the finished bread part in bowl with flour and let it rise covered for another 1 hour in a warm place.
After the walking time, knead the dough again and let it rest for another 10 minutes.
Preheat the oven to 250 degrees.
Form 2 breads from the dough, dust again with flour and e.B. put in bread baking pans or a stewing pot lined with baking paper. Cast iron is also very suitable. Let the breads rest in the moulds on the baking tray for about 15 minutes.
Put the breads in the oven and bake at 250 degrees for about 10 minutes. Then reduce the temperature and bake at 160 degrees for another 15-20 minutes.
Remove the breads from the oven and let them cool in the mold or on a baking tray covered with a tea towel.
