Pumpkin

1 Hokkaido pumpkin

1 tbsp Pimp my Pumpkin by STAY SPICED!

20g olive oil

Pinch of salt

 

Pumpkin panco crumbs
30g butter

30g olive oil
50g Panco crumbs

25g pumpkin seeds, chopped
Some Pimp my Pumpkin by STAY SPICED !

Pinch of salt

 

True Harmony Foam

3 tea bags True Harmony by STAY SPICED !

220g water

150g butter

Preparation

 

Pumpkin
The halved pumpkin with olive oil, salt and Pimp my Pumpkin by STAY SPICED ! marinate, wrap in aluminium foil and stew in the preheated oven at 170°C top and bottom heat for about 1 hour.

 

Pumpkin panco crumbs

In the meantime, let a pan foam with butter and olive oil and add the panco crumbs and pumpkin seeds. Roast the pumpkin crumbs slightly golden yellow and drain on a kitchen paper. Season with a little salt.

 

True Harmony Foam

Boil the water and let 3 tea bags of True Harmony tea steep. After 10 minutes, remove the tea bags, salt and mix with the cold butter cubes to a foam.


 

Wreak

Remove the pumpkin from the oven, cut into pieces and place on a plate. Generously spread the True Harmony foam on the plate and sprinkle the pumpkin pancopods over it. To taste, possibly drizzle with brown butter.
